ad above all by the amazing combinations of the dinner’s dishes.

Hotel, the magic of the fireworks on the background of a festive Venice, and “gran
finale” at the Metropole, trotters and lentils to welcome a lucky New Year!

Welcome Aperitif
with some of our chef’s small secrets
Terrine of sliced and grilled “foie gras” and shrimps in a pig’s jowl wrapping,
vegetable mustard “brioche” bread with port wine and shallot quintessence.
The typical “risotto” creamed with bilberries, very lightly smoked pigeon breast,
“Tropea” red onions with traditional balsamic vinegar flavouring.
Seared tuna fish and salmon with a “gratin” of walnuts
on a layer of “mille feuilles” potatoes and a whipped citrus fruit sauce
Suckling “Cinta Senese” pig “confit”, glazed green apples
with olive oil and basil.
The “gran finale” with our different versions of “panettone”
Price per person: Euro 550 including wines, water, coffee
and the midnight toast.
In order to match the atmosphere, dark suit and evening dress
are kindly requested.
